Member Spotlight: From Poland to Ponsonby – Marcin Kulak of Mekong Baby
28 Aug 25Hospitality is more than a profession for Marcin Kulak – it’s a calling. From his early days in Poland to co-owning one of Auckland’s most vibrant dining destinations, his journey reflects passion, perseverance, and the power of community. Marcin’s story is featured in this Member Spotlight.

A childhood inspired by hospitality
Marcin grew up in a small Polish town under the influence of his mother, a dedicated hotel professional. She was well-known in their community, a figure admired for her warmth and professionalism.
“I always saw my mum as this kind of little hero of our town,” Marcin recalls. “Everyone that was anyone knew her, welcomed her on the streets – and that aura was inspiring.”
At 20, Marcin entered the hospitality industry as a section waiter. From the start, he was hooked. “The moment you get the first feel of hospitality, it’s very hard to get out afterwards.” he laughs.
Building a global career
Seeking new opportunities, Marcin moved to London where he spent ten years as a general manager. In 2015, he relocated to Auckland with his wife Jackie and their two sons. Just three years later, he joined Ponsonby institution Mekong Baby as manager – and within 12 months, the couple became co-owners.
Today, Marcin and Jackie run the restaurant together, combining over 30 years of hospitality experience. Their shared leadership has cemented Mekong Baby’s reputation as a must-visit destination for both locals and international visitors.

Mekong Baby: A fusion favourite
Set on the bustling Ponsonby Road, Mekong Baby is more than a restaurant – it’s an experience. The décor is bold and stylish, with tropical murals and a striking marble bar setting the scene for South-East Asian flavours.
Signature dishes include jungle curry, quail egg dumplings, and braised pork belly – all designed for sharing. Diners describe it as “hands down one of the best meals I’ve ever had” and “consistently one of Ponsonby’s stand-out venues.”
Resilience through challenges
Like many hospitality operators, Marcin faced significant hurdles during and after the pandemic, particularly with staffing shortages. Immigration hurdles made it tough to recruit skilled chefs. At one point, Mekong Baby had to reduce its operating hours.
But Marcin’s determination shone through. He drew on personal networks to recruit international talent and navigated complex regulations with persistence. This resilience, paired with Jackie’s leadership, has kept Mekong Baby thriving in a tough environment.
A story of passion and perseverance
Marcin’s career is a testament to what hospitality can offer: connection, culture, and community. From watching his mother build a reputation in Poland, to leading one of Auckland’s busiest fusion restaurants, his story reflects the spirit of our industry – hardworking, innovative, and people-focused.
