Setting up for success – know your table plan and set up, bookings briefings, first impressions

Greeting and Seating – the first 10 seconds, cues for better service, new/regular customers, body language

Working the room – ambiance, checking in with guests, communicating with kitchen and section staff, having a Plan B

End on a high note – payments, handling complaints, rapport at the door, following up
Originally from the UK, Katie grew up living in pubs and restaurants, and has since worked all manner of FOH and BOH roles around the world. Katie migrated to NZ in 2010, looking after Multi-site Operations with Hipgroup and Madam Woo/Hawker & Roll. Katie is currently Restaurant Manager at Hello Beasty in Auckland’s viaduct.
