About the roles

Sous chef

The role entities assisting the Head chef in the day to day running of Ki Māha’s kitchen, assuming responsibility in the absence of the Head chef. This role is a senior role and the ideal candidate should have at least 5 years experience in a busy commercial kitchen.

• Assist the Head chef with menu planning and bring new ideas to the table.

• Ensure that the kitchen delivers consistent, high quality food that meets and cost control standards.

• Uphold morale in the kitchen, and impart knowledge, skills and training to kitchen staff to ensure high standards.

Pastry chef

This role is to manage the operation of the pastry section of the kitchen following the Head chef & Sous chef’s guidelines – to provide a great quality product that delivers on customers expectations. The ideal candidate should have at least 3 years experience in a busy commercial environment.

• Responsibility for the operation of the pastry section of the kitchen – including desserts, breads and other baked goods.

• Liaise with the Head chef to develop the dessert menu and pastries for the establishment.

• Ensure that recipes and proportions are strictly adhered to, to ensure consistency, quality and cost control.

Chef de partie

To manage the operation of a designated section of the kitchen following the Head chef & Sous chef’s guideline – providing maximum quality in order to satisfy customer expectations. The ideal candidate should have at least 2 years experience in a busy commercial environment.

• Responsible for the operation of a designated section of the kitchen.

• Ensure that recipes and proportions are strictly adhered to, to ensure consistency, quality and cost control.

• Perform food preparation tasks in the kitchen – assisting senior chefs to prepare stipulated menu items or ingredients for dishes.
